For more than 40 years, Christian Faure has been concocting macaroons, cakes and other sublime sweets for the fine palates. Named Meilleur Ouvrier de France in 1997, the renowned and award-winning pastry chef became known in Quebec with Maison Christian Faure.
He had created the Maison Christian Faure, which no longer exists, but the pastry chef had not worked there for several years.
If the situation did not go as he wished, with the pandemic further complicating things, the pastry chef seems serene and motivated by his new project, nicely named Ôfauria.
I already had the project to write a book of this name — Ôfauria, comme un monde imaginaire de douceur — and to share pastry recipes throughout the seasons, while looking back on my career and my history. I had already started making photos and texts and, given the current situation, I had the idea to offer the pastries on a 100% online website.

Now alone aboard his ship, and supported by his wife, he has returned to a business model that is much less complex to manage, where he can let go of his creativity and which focuses on the freshness of products.
Thus, everything is made to order in a kitchen-laboratory (on days of activity, you can order until midnight for delivery the next morning!).
"I try to reinvent recipes and I work differently. In a shop, the cake waits for the customer in the counter. That way, the cake doesn't have to wait any longer!", he says, adding that he would like, when the situation allows, to open Ôfauria counters that will offer "accessible luxury".
